Where’s the Granola?
I said that I had a delicious recipe for homemade granola that I would share, so… here it goes. My husband found the original basic recipe on cdkitchen, which he uses quite frequently.
I tweaked it a little, and this is what I have!
8 cups old-fashioned oats
1 cup sliced almonds
1/2-3/4 cup sweetened coconut
1 cup packed light brown sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup vegetable oil
1/2 cup honey
2 teaspoons vanilla
Preheat your oven to 300 F. In a large bowl, mix the oats, almonds, brown sugar, coconut, salt and cinnamon.
In a saucepan, warm the oil and honey. Whisk in the vanilla.
Carefully pour the liquid over the oat mixture, and stir gently with a spatula.
(Guess I did a good job, huh?)
Spread the granola in a 15 x 10 inch baking pan. Bake for 40 minutes total, stirring carefully every 10 minutes.
When it’s done, transfer the pan to a rack to cool completely.
If you like, you can add raisins or dried cranberries.
If you put the granola in plastic bags or airtight containers, the instructions say it will be good for one week at room temperature or in the freezer for 3 months.
In my house we’re lucky if we have it for five days! Hope you like it too!
